I was looking at the 2.5 gallon tank that they sell at petsmart and wanted to know if it would be good for texas bark scorpions and if it is only big enough for one?

It should be fine for a few.
Just make sure you have enough hides or bark for them.
A friend of mine had about 15 to 20 in a 10gl, they were fine.

Sterilite tubs are an option like neal said, but down the line, it comes up to personal preference really. Personally I prefer clearseal tanks.

Neal, C. vittatus is also called Texas bark scorpion.

Yeah, I'm with you on that. I prefer to keep on to latin names to avoid confusion

Yes def with Neal and DolbyR.

Latin names are def good for proper info.

Plus I love the Sterlite containers at Wally World to .

They are cheap and easy to maintain.
Most of mine are in those same containers.
