Whats the best temperature and humidity level to keep my emps tank at?

Temperature doesn't matter too much unless your house gets really cold. Humidity, keep it wet but not sopping. The dirt should feel wet and compact a bit but not be dripping if you pick it up.

Ideal temp is 85F and humidity is kinda....sketchy. Nobobody trust the gauges so just keep the substrate moist to the touch and you should be fine.

Like they said, higher-end on both counts.
If that's your emp in your avatar, change out the substrate ASAP. The best options are coconut fiber (commonly sold in compressed bricks that expand when placed in water) or peat.
