I heard that desert scorpions such as Arizonensis and the dune scorpion would be best with some sort of moisture underneath the sand.
Is that true? How do I provide that moisture safely and effectively? Do I use coconut fiber? I have a dune scorpion.

Dune scorpions do not need moisture S.meseanensis are ok without it. H.arizonensis does need humidity to molt properly but as adults they can be kept bone dry.

I'm interested in keeping arizonensis as my next specimen when I get the chance.
What's a beginner's way of maintaining that humidity? A cave with some moisture in it?

The beginner's way is to just get an adult. Do a search here on the forum there has been a lot of talk about this.
