ok so I woke up this morning to find my het spin covered in baby scorp. I haven't been on here in a long time and am wondering what I should do.

Ignore your scorpion for one week to ten days.
If anything, just carefully add water to the substrate.
When they leave mom's back, you can either leave them in there with her, separate them into individual containers, or move them to their own community.

what do they eat when they leave her back just small crickets?

Any prey item works -- if you use medium or large crickets, I'd suggest headcrushing them to avoid the risk of them attacking the scorps.
