I've searched the forum and have only found spots of info on when Androctonus australis mature. Is the 6th instar when they reach maturity or 7th. I've seen some say 6th, but the male will still molt to 7i and the females to 8i. Which is it?

I would say both sexes achieve sexual maturity at 7.instar.
When i mentioned sexual maturity, it means that they are able to mate and produce offsprings.
However, there are females who moult pass 7.instar as their final moult. Males generally attain adulthood at 7i and remain so with no further moults.

how about L.mucronatus? what is the maturity instar?
i have one molted into 6i recently...
