Well, first off what kind of scorpion is it and how big? It could be adjusting to its new home, be in pre-molt or just not hungry. Scorpions can go long periods without eating so I wouldn't worry if its only been a week. Try tossing a cricket in once a week and if it doesn't eat it in 24 hours remove the cricket and try again in another week.

As long as the scorpion doesn't lose condition it should be fine, they can go months without food if it had enough food before it started not eating.
Basically, the only way to know if it's hungry is to offer food so like Gnat said, toss in a cricket once a week and remove if not eaten.
